Borage
Borage is also often called cucumber herb. It grows to about 90 cm high and flowers from May to October. It likes moist and nutrient-rich soils.
The plant was used in ancient medicine for its uplifting effects. It has been used against mental exhaustion and depression. It is also used against coughing, bronchitis and promotes sweating. Just about anything can be used. The seeds are used for irritable bowel syndrome and irregular menstruation. Seed oil is used externally against eczema, and internally to prevent cardiovascular diseases.
In the Mediterranean, it is often used in salads and summer dishes. It tastes like cucumber, from which it gets its name. The blue flower is used to colour vinegar. Besides the flowers, the young leaves are eaten as lettuce and spinach.
